Great espresso doesn't have to end in a demitasse cup. Recipe 1: The KaffaGo Espresso Tonic

The espresso tonic has become a staple of specialty coffee culture worldwide — and for good reason. The bitterness of tonic water and the brightness of a well-pulled espresso create a surprisingly harmonious contrast, with the carbonation lifting the coffee's aromatics in a way that's unlike anything else. What You'll Need

Method

  1. Chill your glass. Fill the tall glass with ice and let it sit for 60 seconds while you prepare the espresso. A cold glass prevents premature dilution.
  2. Pour the tonic first. Add 150ml of cold tonic water over the ice. This is the key step most people get wrong — pouring tonic first preserves the carbonation. Pouring espresso first and then adding tonic destroys the bubbles.

  5. Garnish and serve immediately. Express a strip of lemon peel over the glass (squeeze it to release the oils, then drop it in) for an extra citrus lift.

  • Citrus Tonic: Replace standard tonic with elderflower tonic and add a slice of blood orange. Pairs exceptionally well with a washed Yirgacheffe.
  • Sparkling Water Version: Swap tonic for high-quality sparkling water for a less bitter, cleaner profile. Great for showcasing very delicate light roasts.

Recipe 2: Ethiopian Cold Brew Concentrate

Cold brew is the slow-extraction counterpart to espresso — where espresso uses pressure and heat to extract in 30 seconds, cold brew uses time and cold water to extract over 12–24 hours. The result is a coffee that's naturally low in acidity, intensely smooth, and deeply sweet — with none of the bitterness that heat extraction can introduce.

Ethiopian beans, particularly naturals from Kaffa and Yirgacheffe, produce cold brew with extraordinary fruit complexity — think blueberry jam, dark cherry, and a floral sweetness that lingers long after the last sip.

What You'll Need

  • 100g coarsely ground Ethiopian coffee (natural process recommended)
  • 700ml cold filtered water
  • A large jar or pitcher with a lid
  • A fine mesh strainer or cheesecloth
  • A second jar for storing the finished concentrate

Method

  1. Combine coffee and water. Add 100g of coarsely ground coffee to your jar. Pour 700ml of cold filtered water over the grounds. Stir gently to ensure all grounds are saturated.
  2. Cover and refrigerate. Seal the jar and place it in the refrigerator. Let it steep for 16–20 hours for a balanced concentrate. Steeping longer (up to 24 hours) produces a stronger, more intense result. Steeping at room temperature for 12 hours also works but produces a slightly different flavor profile — more chocolatey, less fruity.
  3. Strain carefully. Pour the cold brew through a fine mesh strainer lined with cheesecloth or a paper coffee filter into your second jar. This may take 5–10 minutes — don't rush it or press the grounds, as this introduces bitterness.
  4. Store and serve. The concentrate keeps in the refrigerator for up to 2 weeks. Serve diluted 1:1 with water or milk over ice, or use it straight as a concentrate in cocktails and recipes.

Serving Suggestions

  • Classic Cold Brew: 1 part concentrate + 1 part cold water over ice. Add a pinch of salt to enhance sweetness.
  • Ethiopian Cold Brew Latte: 1 part concentrate + 1 part oat milk or whole milk over ice. The natural sweetness of Ethiopian beans means you rarely need added sugar.
  • Cold Brew Tonic: 1 part concentrate + 2 parts tonic water over ice. A lower-caffeine, smoother alternative to the espresso tonic.
  • Backcountry Cold Brew: Pre-make the concentrate at home, pour into a sealed flask, and bring it on your trip. Dilute with stream water (filtered) at camp for an effortless trail coffee experience.
